Frostings:
Italian Buttercream (in vanilla, orange, lemon, almond (Weddings)
(This is a cooked frosting / filling, in which a very hot sugar syrup is poured over whipped egg whites.
After cooling, butter is added. Because butter is not white, the frosting will be on the ivory side. Pure
vanilla extract is used instead of artificial white vanilla.)

Cream Cheese
Glazes...such as lemon, over the lemon pound cake
Ganache .... a comination of chocolate and cream, may be poured over a cake.
Whipped Cream
Fillings:
Italian Buttercream, in vanilla, orange, lemon, almond (Weddings)
May be blended with a custard or fruit base.
Cream Cheese (for pumpkin cake)
Pastry creams or cooked fillings in orange, lemon, almond
Raspberry filling (cooked, for Bavarians and for choc. cake)

Peanut Butter (cooked...very smooth and silky, not as sweet)
Chocolate Mousse (a blend of ganache and whipped cream. )
